As soon as you pop the cork on this wine and you stick your nose in a glass, you know you smell Burgundy! “Barnyard” is a term so often used to describe red Burgundy that it’s easy to forget how accurate a description it can be, and the Domaine Pavelot Savigny Village is a case in point. On the nose, you instantly smell those earthy, muddy aromas of a farmyard and a prominent aroma of straw. There’s also a good dose of fruit, with concentrated cranberry, blackberry and blackcurrants filling the glass. On the palate, bramble fruit takes centre stage, with refreshingly tart bramble leaf flavours adding lift to the wine. There’s ample structure to this wine, too. The acidity is prominent but not overpowering, and the tannins are persistent and fine, taking on a chalky feel in the finish. This wine is in a particularly fine place right now, with the aggressiveness of its youth well behind it. Enjoy now, or cellar it and enjoy it as it develops over the next five years.
